Certified Great Dough.
We drive quality by making all of our doughs in house. Slice only has two certified dough makers. Meaning, no matter where or when you eat our pizza, the dough was made by one of those two people.
Slice co-owner, Matthew Gillett, went through an intensive 5 day course to become certified in Scuola Italiana Pizzailoli. He understands the science, ingredients, and techniques necessary to make the best pizza in the world.
Hot fired ovens.
Our Pizza Ovens operate anywhere from 650 - 800 degrees and bakes the pizzas in less than 5 minutes.
Baking at this high of heat cooks the bottom and crust of the pizza very quickly. We look for consistent “leoparding” across the bottom of the pizza to determine the correct doneness. Baking a pizza using this technique requires more effort and training, but we believe it leads to some of the most delicious pizza around. The oven’s high heat give the pizza a delicious char and crisp.

Michigan Hardwoods
Slice’s West Lansing Location uses a blend of kiln-dried Michigan Hardwoods to heat our Wood Fired pizza oven.
We’ve found the Kiln-Dried burns best to get the pizza results
This is the very same blend of wood we’ve used to create our BBQ for the last 7 years.
